At the end of May, Leigh’s Brewing Co. opened up for their soft opening. They took some time to learn, revamp, and prepare for their grand opening at the end of August. Their official grand opening took place Thursday, August 28th, 2025.

If you ask the owner of Leigh’s, Lee Ringling, what is improved in their grand opening, he can sum up the answer in two words:

With the help of Chan Senesynho, their new brewer, they’re working on just that. Chan’s favorite style of beer is a West Coast IPA because of the clarity and floral notes. She also appreciates the lower abv. When tasting Chan’s Promise, her IPA brewed with Mosaic hops coming in at 6.1% abv, you can really start to see the future of Leigh’s Brewing.

While an exact beer menu for Leigh’s hasn’t been set (as in mainstays or rotating beers haven’t been fully decided), they will definitely offer an IPA on draft at all times and are looking to expand, possibly bringing on a Mexican lager, a stout when it gets colder, and many seasonal offerings.

When I visited on Saturday, August 30th they had six beers on draft—Blondlee , Blueberry Blonde, Mango Blonde, Chan’s Promise, “Hefe” Nice Day, and Dunkle Funkle.

My two personal favorites were Chan’s Promise and the Mango Blonde. Chan’s Promise is an IPA that is bursting with flavor. Mango Blonde tastes fresh due to the fresh mango puree, creating the perfect end of summer beer. Chan prefers using fresh fruit purees over using extracts in her brewing.

Lee hopes to build to ten beers on draft.

They plan to have a slightly rotating draft menu but mainly want to put their customers in the driver’s seat and see what people like, according to Lee.

Lee admits there were some slight hiccups when opening up and he likes to do things “the hard way.” The idea to own a brewery crossed his mind when he became a regular at Big Lake some time ago when the brewery was in the very same location Leigh’s is in now.

“I always wondered if I could do this,” Lee said.

It started as almost a joke when he said, “I want to own a place like this.” It took Lee’s wife, Mary, some persuasion. His daughter, Laurel—who also happens to be the taproom manager—stepped in to help convince his wife.

Lee sought to provide a safe place for people to enjoy a few adult beverages. Leigh’s offers a place for the community; they want it to be a place where families and children are welcomed. (For those of you who know local breweries, or breweries in general, this is not uncommon at all.) Board games will be available and they foster family friendly crowds.

He also stresses the need to bring a beverage to the table for everyone.

“We always want someone to have something to drink,” he said. This nobody left out attitude drives them to even have N/A beverages available. Aside from beer they also offer wine, ciders, and have a cocktail menu.

Chan worked as a brewer’s assistant at Hopland and has been mentored by Tyler Forbes, the Head Brewer of Burzurk Brewing Co. Chan appreciates her mentorship and continues to learn while brewing.

“Brewing is more mental than physical,” Chan added.

Lee said eventually he might seek possible distribution in the far off future, but first wants to focus on the beer community around him.

While Leigh’s doesn’t offer food, people can bring in their own food, whether it’s a pizza from Peppino’s or Asian cuisine from Fushion Thai Kitchen or food from home.

Leigh’s offers a mug club membership that includes a T-shirt, $1 off all drinks, a double happy hour—not many places do this—where the $1 off still applies during happy hour, a birthday gift, and member only promotions and invites to events.

They also offer a military discount of 25%. In addition, they’ll have merchandise somewhere down the road. They’re also looking to offer live music on the weekends.
